I do love a nice Cinnamon roll and have stumbled across this with my experimenting with the sweetness of dates and bananas. It has been a hit with my husband who can be my hardest critic and of course my kids!! Hope you enjoy it, leave your comments and questions!! Would love to hear how you liked them. :-)
Spelt Flour Sugar Free Cinnamon Rolls
Rolls- 2 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
2/3 cup coconut milk (or a mix of coconut cream)
1 Tbsp honey
Filling – 2 tsp cinnamon
2 Tbsp coconut oil (melted)
Topping- 1 cup dates
1 tsp vanilla
¾ cup of coconut milk (or a mix of coconut cream and water)
Preheat oven to 350/180 degrees (F/C), grease a round cake pan (I used a 9 inch one)
Rolls- Mix flour, b. powder and salt together, then add in wet ingredients and mix. It will be hard to combine, so get your hands in there and keep mixing it till it all comes together. You can add a bit more milk if you need to, but I haven’t found a need to, they still come out soft and yummy! Plop it out on a floured surface and roll it out into a large rectangle. It might take a bit of work.
Filling- Mash the bananas in a bowl with cinnamon and melted coconut oil. Spread it over the dough and roll it up. Cut into 10-12 rolls, they may get squashed in the cutting process; they will come up during the baking. Place in greased round cake pan, put in the oven for 12-15 minutes, until tops are firm, inside will be soft.
Topping- While the rolls are cooking. Put dates in a bowl with boiling water over them to soften. I have used pitted dates. In the meantime, put the coconut milk (or cream mixture) and vanilla in a blender or food processor. After about 5 minutes of soaking, drain dates and add to blender, blend it for 30ish seconds. Having date bits in the frosty doesn’t hurt it, so stop it and taste it to see if you like the texture. Add more milk if too thick, or blend more for a finer texture.
Pour Coconut Date Frosting over the rolls and dig in!! These will last for 3 days and are good cold or warm. Or in my house a day!! Lol… with two little boys, they ate 2 each :-O Love making “Healthy Sweets”
