This is a hit in my house and super easy for me to put together. I recently made these for my kids and another kid we had visiting. Not only did my boys eat them all, so did their friend (and the dads!) lol… was concerned with feeding someone else’s kids healthy stuff they may not like, didn’t want him to starve.
I served these up on a plate with sweet potato fries and some regular (homemade) potato fries. My boys ate the sweet potato fries; the guest ate the regular fries but loved the burger! Bonus!
500g meat (beef, pork, or chicken)
¼ cup seed meal (I use my reserve of pepitas/flaxseed meal I keep in the fridge)
1 cup grated zucchini/carrots/chopped up spinach
1/2 cup bread crumbs
Salt & Pepper
I have a hand held grater so the grating does take a few minutes. If I use spinach I toss it in the food processor with the carrots/zucchini to make it quicker. Then mix all together and cook in a pan. Top with cheese if you’d like.
The good thing about this recipe is that I can hide green “stuff” in it and if the boys are being picking with the green veggies they don’t notice it here. :-) Lately, my youngest will spit out the green veggies, eat around them or not eat it at all. This is a great way to sneak them in.
