Yep, this is a school friendly bar! No nuts, dairy or Eggs!! Thankfully this is an easy go to recipe and my boys love it!!
What you’ll need:
150g of Dates (I soak them in some boiling water for 5 min before using them, easier to blend)
1/2 cup Pepitas (pumpkin seeds)
1/2 cup Flaxseed
1/4 cup Sesame seeds
1/4 cup Chia seeds
1/4 cup Honey
1 cup Puffed rice
Pre heat oven to 180/350. Line a 20 x 20 square pan with baking paper.
Put all seeds in a food processor and blend on medium for 30 seconds, just to break them up a bit. Add the dates (drain them out of the water if you had them soaking still) and blend again until dates are broken up. Add honey and puffed rice, blend and stir until combined.
Spoon the batter into the pan and press firmly down on the mixture. Bake in the oven for 15 minutes then allow to cool for 10 minutes. Take out of the pan to cut up into squares, put in an air tight container in the fridge for will be good for a week.
