Who doesn’t love a yummy, wholesome banana bread!?  Here’s one to add to your list!

I have been known for making Banana bread and with each year I’ve tried to make a healthier version. I have been on this recipe for a while, as it has a good mix of seeds and oats; while still resembling a good homemade bread.  This can be used as a breakfast, snack, lunchbox or something for the sweet tooth. Enjoy.

WET INGREDIENTS
1 BIG cup of mashed bananas (use up all those brown bananas lying around)
1/3 cup honey
1/3 cup coconut oil
1 tsp vanilla
1 egg
¾ cup coconut milk

DRY INGREDIENTS
1 cup spelt flour
½ cup of flaxseed & pepitas meal
1 cup rolled oats/barley
1 ½ tsp Baking powder
¾ tsp Baking soda
¼ tsp salt
1 tsp cinnamon

Oven 180 degrees (350), 9 inch pan greased.
Mix all wet ingredients, in separate bowl mix dry ingredients. Add wet to dry and mix till combined, do not over mix. Pour into pan.
Bake 60-70 minutes or until toothpick is clean. Remove, let cool on wire rack completely (if you can wait that long) then cut and enjoy.  Wrap tightly to keep moist.
