Quinoa Meatloaves
makes 12

500g Minced (ground) beef
2.5 cups grated veggies (I’ve used a mix of carrot, zucchini, broccoli, onion)
1 cup cooked quinoa
2 Tblsp of tomato sauce
2 Tblsp of Dulse Flakes (see below)
1 Tblsp of dried parsley leaves
Salt and Pepper
Optional: extra tomato sauce and or slice tomatoes for the top

Preheat oven to 180/350 degrees.  Line muffin tray with 12 paper cups.

Place all ingredients in a bowl (except optional items) and mix well with hands. Make meat mixture into balls that fit into the paper cups.
Optional: Brush the top with extra tomato sauce and/or top with sliced tomatoes.

Cook in preheated oven for 30 minutes until cooked thoroughly.

Store in airtight container in the fridge for 2 days.

**I put these in a container with a fork and sauce on top for my son’s lunch at school. Great change of pace from wraps or sandwiches!!**

DULSE FLAKES: Is dried seaweed full of VITAMINS A, C, E AND B’s, Iodine, Iron, Calcium, potassium, magnesium, chromium and zinc.
