apple bread2 cups grated sweet apple
2 tsp baking powder
¼ tsp sea salt
3 eggs
¼ cup coconut oil
½ tsp cinnamon
1 tsp vanilla
½ cup seed meal (flaxseed and pepitas meal)
2 cups spelt flour
½ cup raisins/sultanas/dried cranberries

Preheat over 180C line a bread pan with baking paper.

Mix apple, baking powder, salt, eggs, oil, cinnamon, sultanas, nuts and vanilla in a bowl.  Mix well using spoon or hands making sure the apple is fully mixed in.  Add the spelt flour until combined.  Spoon into the prepared bread pan and top with sliced apples and cinnamon.   Cook for an hour or until an inserted skewer comes out clean.  Allow to cool before serving.

This recipe has no sugar, with all the apples in it you will get a nice gentle sweetness throughout the bread of course the raisins are a pleasant surprise.

Great straight after cooling, cold or toasted up with some yummy butter on it.
